Morel (Morcella esculenta) also known as Honey combed mushroom or Guchhi is a highly prized mushroom variety which is collected from the wild in western Himalayan region. It grows naturally on decaying vegetable matter during May-August. The commodity is perishable and preserved by sun drying in the field while the international market demands fresh morels. Canning is not feasible there due to sporadic small collections. This process facilitates storage of the harvest in wide mouth HDPE barrels along with a brine formulation. The mushrooms can be kept preserved therein for subsequent transport, repacking.
